What makes Szechuan/Sichuan cuisine so special? Hot, humid climates like this huge central-Chinese land-locked province call for food that is both hot and highly spiced because hot foods like red chilli stimulate the palate, making it more sensitive to the other flavours—sweet, sour, bitter, salty, aromatic, and fragrant.

The geography and cultural differences of Szechuan are so vast, this will be no more than an introduction but we’ll do our best with rice, noodles, soy, garlic, ginger, star anise, pork and shrimp. Come and enjoy a day of cooking before preparing your own communal lunch to enjoy with your new friends. Each student will have their own work station, equipment and ingredients to work with. These courses are designed to be relaxed, informative and fun.

Suitable for vegetarian and gluten free. Not suitable for vegan.
